Dirty Rice

This Thanksgiving we were looking for a good savory dish to take to Friends-giving. We’d never made dirty rice before, so we decided to give it a go. And my goodness did it turn out nicely. Needless to say we didn’t have any leftovers to pack home with us. I hope you find this as tasty as we did.

Ingredients

  • 2 cups long grain white rice
  • 4 cups chicken broth (to cook the rice)
  • 1 bunch of fresh parsley
  • 1 lb hot sausage
  • 1 lb ground beef
  • 2 white or yellow onions, diced
  • 2 green bell peppers, diced
  • 5 celery stalks, sliced (not too thin)
  • 4-5 cloves garlic, minced
  • 1 tsp paprika
  • 1/2 tsp cayenne pepper (or to taste)
  • 1 tsp dried thyme
  • 1 tsp dried oregano
  • 2 bay leaves
  • 1-2 tsp salt
  • 1 tsp fresh ground black pepper
  • 1-2 tsp cajun seasoning
  • 1/4 cup flour
  • 2 cups chicken broth

Instructions

  1. Rinse the rice and cook in a rice cooker using chicken broth (not water).
  2. Cut off the top of the parsley and chop relatively finely. Set aside.
  3. Once the rice is done, let cool for a few minutes and then fold in the parsley. Set aside.
  4. Dice the onions and bell peppers. Slice the celery.
  5. Brown the ground beef and hot sausage in a good size pan.
  6. Add the vegetable and cook until they start to soften, about 5 minutes.
  7. Mix in garlic, cayenne, thyme, oregano, salt, pepper, and cajun seasoning. Cook for 1-2 minutes.
  8. Sift in the flour and stir well to combine, coating the meat and vegetables. Cook for another 1-2 minutes.
  9. Add the remaining chicken broth and bay leaves. Scrape and combine any fond from the pan. Simmer for another 5-10 minutes.
  10. Fold in rice and parley mixture. Simmer for 5 more minutes and then serve.
