Dirty Rice
This Thanksgiving we were looking for a good savory dish to take to Friends-giving. We’d never made dirty rice before, so we decided to give it a go. And my goodness did it turn out nicely. Needless to say we didn’t have any leftovers to pack home with us. I hope you find this as tasty as we did.
Ingredients
- 2 cups long grain white rice
- 4 cups chicken broth (to cook the rice)
- 1 bunch of fresh parsley
- 1 lb hot sausage
- 1 lb ground beef
- 2 white or yellow onions, diced
- 2 green bell peppers, diced
- 5 celery stalks, sliced (not too thin)
- 4-5 cloves garlic, minced
- 1 tsp paprika
- 1/2 tsp cayenne pepper (or to taste)
- 1 tsp dried thyme
- 1 tsp dried oregano
- 2 bay leaves
- 1-2 tsp salt
- 1 tsp fresh ground black pepper
- 1-2 tsp cajun seasoning
- 1/4 cup flour
- 2 cups chicken broth
Instructions
- Rinse the rice and cook in a rice cooker using chicken broth (not water).
- Cut off the top of the parsley and chop relatively finely. Set aside.
- Once the rice is done, let cool for a few minutes and then fold in the parsley. Set aside.
- Dice the onions and bell peppers. Slice the celery.
- Brown the ground beef and hot sausage in a good size pan.
- Add the vegetable and cook until they start to soften, about 5 minutes.
- Mix in garlic, cayenne, thyme, oregano, salt, pepper, and cajun seasoning. Cook for 1-2 minutes.
- Sift in the flour and stir well to combine, coating the meat and vegetables. Cook for another 1-2 minutes.
- Add the remaining chicken broth and bay leaves. Scrape and combine any fond from the pan. Simmer for another 5-10 minutes.
- Fold in rice and parley mixture. Simmer for 5 more minutes and then serve.
